Lite höstrecept
Nu har ju hösten kommit med fart och med den finns ju en del att göra av det som finns i naturen, vill dela med mej av mina favoriter...
Först en tomatsallad av de gröna tomater som inte mognar i växthuset.
Tomatchutny
2 kg gröna tomater
1 kg gul lök
0.5 kg morötter som sköres i slantar och förkokas ett par minuter.
Skiva tomater och lök, lägg i gryta med de förkokade morotsslantarna.
Gör en påse av tex gasbinda och lägg i kryddor.
7 nejlikor, 2 hela nejlikor.
Ta av morotsspadet och vatten så att det blir 5 dl ihop, töm detta över tomatblandningen. Lägg i kryddpåsen.
Tillsätt 2 grader falu ättika
1 kg socker.
Kokas i 20 min, låt stå en stund, ta upp kryddpåsen och töm sen upp i glasburkar.
Jag använder denna chutny till fisk, kött, korv ja allt, och jag gör alltd dubbel sats, det är super duper...
Sen har ni säkert plockat en massa trattkantareller, av det kan ni göra en Min vilda svamsoppa.
Min vilda svampsoppa
Trattkantareller förvällda 4 dl
1 röd lök som hackas fint
Fräs trattisar och röd lök
Lägg i gryta, tillsätt sen
2 msk ädelost
1 l vatten
1 tsk salt
malen svartpeppar
1 tsk timjan
2 svampbuljongtärnin
1 msk soja
0,5 dl persilja
5 krossade enbär
1-2 msk rönnbärsgele
Gör en redning av 1 dl grädde och 2 msk vetemjöl, töm detta i soppan och rör om.
Koka en stund så soppan går ihop...
Baka ett gott bröd till....jag har ett...
Solrosrutor
Till 24 st bröd 225 grader
50 gr jäst
5 dl lättmjölk
0,5 dl matolja
1,5 dl rostade solroskärnor
1,5 tsk salt
ca 12-13 dl vetemjöl special
Pensling och garnering:
Uppvispat ägg
solroskärnor
Gör matbrödsdeg som vanligt, jäs ca 40 min. Alla ingredienser skall.
Knåda degen smidig, lägg degen i en långpanna 30X40 cm, klä den med bakplåtspapper. platta ut degen så den täcker långpannan. Skär degen i rutor med en oljad vass kniv. låt jäsa under duk ca 30 min.
Pensla sen degen med uppvispad ägg och strö över solroskärnor. Grädda i mitten av ugnen 15-20 min eller tills bröden har fin färg och känns torra.
Dessa bröd bryts nu bara isär och är jätte goda med lite extrasaltat smör till trattissoppan....
Nu skall jag börja med älgsteken så den är klar tills ungarna kommer på middag...
